Some nights you want dinner to feel a little special without doing any extra work — that’s exactly what this recipe delivers. One sheet pan, one marinade, and a flavor combination that’s quickly become one of my favorites: our Milanese Gremolata Olive Oil paired with Grapefruit Balsamic.

If you haven’t tried Milanese Gremolata before, think garlicky, herby, and citrusy — it’s basically a shortcut to big flavor. Add a splash of Grapefruit Balsamic and you get a bright, tangy edge that turns simple cubed chicken breast into something you’ll want on repeat. Everything roasts together with sweet potato wedges, so cleanup is minimal, and we finish the plate with a cool, creamy homemade tzatziki and a few slices of avocado. Sweet, savory, tangy, cool — it hits every note.
Why You’ll Love This Recipe
- One pan, minimal cleanup: Chicken and sweet potatoes roast together, so dinner and cleanup are both quick.
- Big flavor, few ingredients: The Gremolata oil and Grapefruit Balsamic do most of the work in the marinade.
- Balanced plate: Warm, spiced chicken and sweet potatoes meet cool tzatziki and creamy avocado for a dish that never feels one-note.
- Great for meal prep: Marinate the chicken the night before and dinner comes together fast.
How to Make It
Start by whisking together Milanese Gremolata olive oil, Grapefruit Balsamic, honey, Dijon mustard, smoked paprika, cumin, salt, and pepper, then toss in the cubed chicken and let it marinate in the fridge for at least 30 minutes. While that’s happening, toss sweet potato wedges with olive oil, salt, and smoked paprika. Spread the chicken and sweet potatoes on a sheet pan with a little space between pieces, then roast at 425°F for 22–25 minutes, flipping halfway, until the chicken hits 165°F and the potatoes are caramelized at the edges. While the pan bakes, stir together Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, and dill for a quick homemade tzatziki. Plate everything together with a scoop of tzatziki and a few slices of avocado.
Pro Tips
- Our Gremolata oil already carries garlic and citrus notes, so there’s no need to add extra fresh garlic or lemon zest to the marinade — it’s doing the work for you.
- Want more tang once it’s plated? A light drizzle of Grapefruit Balsamic right before serving wakes everything up.
- Squeeze the grated cucumber well before adding it to the tzatziki so the sauce stays thick instead of watery.
- Swap the smoked paprika for a pinch of chili flakes if you like a little heat.
This is the kind of dinner that looks like it took way more effort than it did — exactly what I’m always chasing on a weeknight. Grab your ingredients, preheat that oven, and enjoy!
