Some nights call for fast. Some nights call for a little effort. This salmon somehow gives you both, and it’s earned a permanent spot in our weeknight rotation.
Why I Keep Making This
I started making this on one of those weeks where everything felt like too much — work deadlines piling up, errands that wouldn’t stop multiplying, and a kindergartner with very strong opinions about food. I wanted something easy, something I didn’t have to babysit on the stove, but that still felt like I put a little love into it. That’s when I reached for two of my favorite bottles sitting side by side on my counter: our Sweet Valencia Orange Olive Oil and our Peach Balsamic.
These two together are magic. The orange olive oil brings this bright, sunny citrus flavor, while the peach balsamic adds sweetness with just enough tang to keep it from being one-note. Whisk them together with a little honey, some minced garlic, and a touch of paprika and cayenne for warmth, and you’ve got a glaze that turns four plain salmon filets into something that tastes like it came from a restaurant kitchen — not mine, on a random Tuesday.

Here’s how I know this one’s a keeper: my five-year-old cleared his entire plate. If you’ve got a picky eater at your table, you know that doesn’t happen by accident. Orange Peach Baked Salmon
Ingredients
- 3 tbsp honey
- 1/4 cup AOOC Sweet Valencia Orange Olive Oil
- 2 tbsp AOOC Peach Balsamic
- Paprika, salt, pepper, and a pinch of cayenne
- 2 tsp minced garlic
- 4 salmon filets
- Rice or quinoa, for serving
Instructions
- Preheat oven: Preheat your oven to 400°F.
- Mix the glaze: In a bowl, whisk together 3 tablespoons honey, 1/4 cup AOOC Sweet Valencia Orange Olive Oil, 2 tablespoons AOOC Peach Balsamic, 2 teaspoons minced garlic, 1 teaspoons paprika, salt and pepper to taste and a pinch cayenne pepper until well combined.
- Coat the salmon: Place 4 salmon filets in a baking dish and pour the glaze evenly over the top, making sure each filet is well coated.
- Bake: Bake until the salmon reaches an internal temperature of 145°F and flakes easily with a fork.
- Serve: Serve warm alongside rice or quinoa.
