Ingredients

  • bag frozen cubed sweet potatoes OR 1 medium fresh sweet potato, peeled and cubed
  • 1 can black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, frozen, or canned, drained)
  • 1 tbsp AOOC Persian Lime Olive Oil
  • 1/2 cup shredded cheddar cheese
  • Chipotle sauce, to taste
  • 2 large tortillas
  • AOOC Chipotle Olive Oil, for toasting
  • 1 avocado, sliced, for serving

Instructions

    Cook the Sweet Potatoes
    If using frozen sweet potatoes: Cook according to the package directions until softened.
    If using fresh sweet potatoes: Place the cubed sweet potatoes in a microwave-safe bowl with a splash of water, cover, and microwave for 4-5 minutes or until tender. Alternatively, steam or boil on the stove until fork-tender (about 8-10 minutes). Drain well if boiled.
    Prepare the Filling
    In a skillet over medium heat, add AOOC Persian Lime Olive Oil. Once hot, add the black beans and corn. Stir and cook until warmed through, about 3-4 minutes. Remove from heat.
    Assemble the Quesadillas
    Lay one tortilla flat on a clean surface. Spread an even layer of cooked sweet potatoes (either cubed or mashed, based on your preference) over one half of the tortilla.
