6 Ways to Scoop Up Summer: Homemade Ice Cream & Sorbet with AOOC Oils & Balsamics

Below are six of my go-to flavors, plus the exact AOOC products that make each one special. Use this as your shopping list for the sale!

All recipes below make about 5 cups and are written for a home ice cream maker (I use my Cuisinart).


The Two Bases

Almost every flavor below starts from one of these two bases — memorize these and you can build endless flavors with our oils and balsamics.

Vanilla Ice Cream Base

Serves 5 cups

  • 1 cup whole milk
  • ⅓ cup honey (or ¾ cup sugar)
  • 1½ cups heavy cream
  • ½ cup Mild EVOO (or sub any AOOC Olive Oil for a different flavor twist!)
  • 1 tbsp vanilla extract

Sorbet Base

Serves 5 cups

  • 3 cups water
  • 2 cups sugar (or 2 cups honey)
  • 3-4 cups fruit or juice

Pro tip: Want to work an AOOC Balsamic into your sorbet? A little goes a long way — swap about ½ to ¾ cup of your fruit or juice for an AOOC Balsamic instead, and make up the rest with real fruit or juice. That amount packs in plenty of flavor while comfortably fitting within a single 375mL bottle. (You’ll see this in action in the flavors below.)

Basic method for all flavors: Whisk your base ingredients together (for sorbets, gently warm the water and honey/sugar until dissolved, then cool) until fully combined, then stir in your mix-ins, oils, and balsamics. Chill the mixture in the fridge for at least 2 hours (or overnight — this makes a big difference in texture!). Churn in your ice cream maker according to the manufacturer’s instructions, about 20-25 minutes, until it reaches soft-serve consistency. Transfer to a freezer-safe container and freeze for at least 2-4 hours to firm up before scooping.


🫐 Blueberry Sorbet

AOOC products used: Blueberry Balsamic

  • 2 cups water
  • 1½ cups honey
  • 3 cups blueberries
  • ¾ cup Blueberry Balsamic
  • Pinch of salt

A bright, tangy sorbet that tastes like summer in a bowl — the balsamic deepens the blueberry flavor in a way plain fruit just can’t do on its own.


🍋 Lemon Basil Sorbet

AOOC products used: Basil Olive Oil, Sicilian Lemon Balsamic

  • 3 cups water
  • 2 cups honey
  • 2 tbsp lemon zest
  • ¾ cup Sicilian Lemon Balsamic
  • 2 cups lemon juice
  • 1 cup Basil Olive Oil
  • ½ cup fresh basil
  • Pinch of salt

This one is unexpected and so refreshing — the basil olive oil gives it an herby, almost savory backbone that plays beautifully against the bright lemon.


🍇 Raspberry Sorbet

AOOC products used: Cascadian Raspberry Balsamic

  • 2 cups water
  • 1½ cups honey
  • 3 cups frozen raspberries
  • ¾ cup Cascadian Raspberry Balsamic
  • Pinch of salt

Deep, rich raspberry flavor with a little tartness from the balsamic — a customer favorite in sorbet form.


🍑 Sweet Peach Ice Cream

AOOC products used: Sweet Orange Olive Oil, Peach Balsamic

  • 1 cup milk
  • 2 cups heavy cream
  • 1 tbsp vanilla extract
  • ⅓ cup honey
  • ½ cup Sweet Orange Olive Oil
  • 1 cup peaches
  • ¼ cup Peach Balsamic
  • Pinch of salt
  • 2 tbsp orange zest

Peach and orange are a match made in heaven, and the peach balsamic brings out the fruit’s natural sweetness without making it cloying.


🥜 Butter Pecan Ice Cream

AOOC products used: Butter Olive Oil, Vermont Maple Balsamic

  • 2 tbsp Butter Olive Oil
  • 1 cup pecans
  • 1 cup milk
  • ⅓ cup honey
  • 2 cups heavy cream
  • 1 tbsp vanilla extract
  • ¼ cup Vermont Maple Balsamic
  • Pinch of salt

Toast your pecans in the butter olive oil first for extra flavor, then fold everything together — the maple balsamic adds a cozy, caramel-like depth.
