The difference between a plain cheesecake from the grocery store and this is a 20-minute raspberry sauce made with AOOC Dark Raspberry Balsamic — and honestly, that balsamic is doing the heavy lifting. The base recipe is so simple — raspberries, a little sugar, water, and cornstarch to thicken it up. Then off the heat you stir in the vanilla and your AOOC Dark Raspberry Balsamic, and that’s when it transforms. The straining step is what takes it from a chunky compote to a silky, smooth, pour-it-over-everything sauce. Don’t skip it — it only takes a minute and it’s completely worth it. What’s left in the sieve is just seeds, and what’s in your bowl is pure magic.

Obviously I’m obsessed with it over cheesecake — it’s honestly the perfect combination and it is my go-to when I need to bring something to an event and want it to look like I tried way harder than I did. 😂 But this sauce works beautifully on so much more:

AOOC Raspberry Balsamic Sauce
Silky, jewel-bright raspberry sauce with a gourmet twist — made with AOOC Dark Raspberry Balsamic. Gorgeous over cheesecake, ice cream, pound cake, and so much more. Ready in 20 minutes and works beautifully with fresh or frozen raspberries.
Ingredients
- 12 oz (341g) fresh or frozen raspberries
- ¼ cup (50g) granulated sugar (adjust to taste)
- ¼ cup (57g) water
- 2 teaspoons cornstarch
- ½ teaspoon vanilla extract
- 2 tablespoons AOOC Dark Raspberry Balsamic
Instructions
- In a saucepan over medium heat, add raspberries, sugar, water, and cornstarch. Stir to combine.
- Bring to a simmer. Reduce heat to medium-low and gently mash the berries with a spoon as the sauce cooks.
- Cook for 10–12 minutes, or until raspberries have fully broken down and the sauce looks shiny.
- Remove from heat. Stir in vanilla extract and AOOC Dark Raspberry Balsamic. Taste and adjust sweetness if needed.
- Set a fine mesh sieve over a bowl and pour the sauce in. Use a rubber spatula to gently press it through — you’ll be left with a paste of mostly seeds in the sieve. Discard the seeds. For an extra smooth sauce, rinse the sieve and strain once more.
- Serve warm or chilled over cheesecake, ice cream, pound cake, pancakes, crepes, and more. Store covered in the refrigerator for up to 7 days.
