Ingredients

For the Baked Oatmeal:

  • 2 cups old-fashioned oats
  • 1 ½ tsp baking powder
  • 1 ½ tsp cinnamon
  • ¼ tsp salt
  • ¼ cup brown sugar (or maple syrup)
  • 2 large eggs
  • 1 ¾ cups milk (any kind)
  • 2 tbsp AOOC Walnut Oil
  • 1 tbsp AOOC Cinnamon Pear Balsamic
  • 1 tsp vanilla extract
  • 2 medium apples, diced (Honeycrisp or Fuji work beautifully)

Optional Topping:

  • ⅓ cup chopped walnuts or pecans

Instructions

    1. Preheat Oven
      Preheat your oven to 375°F (190°C). Lightly grease an 8×8” baking dish with AOOC Walnut Oil or nonstick spray.
    2. Mix Dry Ingredients
      In a large bowl, combine oats, baking powder, cinnamon, and salt. Stir to blend.
    3. Whisk Wet Ingredients
      In a separate bowl, whisk together eggs, milk, brown sugar (or maple syrup), AOOC Walnut Oil, AOOC Cinnamon Pear Balsamic, and vanilla extract until smooth.
    4. Combine and Add Apples
      Pour wet mixture into the dry ingredients and stir until well combined. Fold in diced apples.
    5. Add Optional Topping
      If desired, sprinkle the walnut/pecan topping mixture evenly over the top before baking.
    6. Bake
      Pour mixture into the prepared baking dish and bake for 35–40 minutes, or until the center is set and the edges are golden brown.
