Sweet Citrus Roasted Chicken & Vegetables

Ingredients

Chicken:

  • 6–8 chicken legs
  • ½ cup orange juice
  • 1 orange, sliced
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 2 tbsp AOOC Orange Olive Oil
  • 3–4 cloves garlic, minced
  • 1 tbsp AOOC Cara-Cara Orange Vanilla Balsamic
  • 1–2 tsp Basik’s Hunter’s Blend Seasoning
  • Black pepper, to taste
  • Salt (optional)

Vegetables:

  • 4–5 potatoes, chopped
  • 2 cups mushrooms
  • 2–3 carrots, sliced
  • 1 red onion, chopped
  • 3 tbsp AOOC Orange Olive Oil
  • 1 tsp salt
  • Black pepper, to taste
  • 1 tsp Basik’s Hunter’s Blend Seasoning

Instructions

      1. In a large bowl or zip-top bag, combine the orange juice, soy sauce, 2 tbsp honey, AOOC Orange Olive Oil, garlic, paprika, Basik’s Hunters Blend, and black pepper. Add the chicken and orange slices, making sure everything is well coated. Cover and marinate for at least 1 hour, or up to overnight for deeper flavor.
      2. Preheat your oven to 400°F.
      3. Spread the potatoes, mushrooms, carrots, and red onion onto a large baking sheet. Drizzle with AOOC Orange Olive Oil, sprinkle with salt and pepper, and toss to coat. Roast for 15 minutes.
      4. While the veggies are roasting, arrange the marinated chicken on a separate baking sheet and place the orange slices over and around the chicken. Drizzle lightly with a little extra honey for added caramelization.
      5. After the vegetables have roasted for 15 minutes, place the chicken into the oven on a separate rack. Bake everything for 35–40 minutes, flipping the chicken and stirring the vegetables halfway through, until the chicken is cooked through and the vegetables are tender and caramelized.
      6. For a beautiful, glossy finish, drizzle the chicken with AOOC Cara-Cara Orange Vanilla Balsamic, then broil for 3–5 minutes until caramelized and slightly sticky.
      7. Serve warm with extra pan juices spooned over the top.
