This vibrant AOOC Cowboy Caviar is a Southwest-inspired bean and veggie salad tossed in a zesty vinaigrette made with AOOC Cilantro & Onion Olive Oil and Key Lime Balsamic. Perfect for summer snacking, topping tacos, or sharing at picnics.

Ingredients

  • 2 bell peppers, diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, quartered (or 1 can rotel tomatoes)
  • 1 cup corn (fresh, canned, or thawed from frozen)
  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 jalapeño, diced (seeds removed)
  • 1/2 cup fresh cilantro, chopped
  • 1 avocado, diced

Cilantro-Lime Vinaigrette:

  • 2 tbsp AOOC Key Lime Balsamic
  • 1/4 cup AOOC Cilantro & Onion Olive Oil
  • 1 lime, juiced
  • 1 tbsp honey
  • 1 clove garlic, finely minced or microplaned
  • 1 1/2 tbsp Basiks Southwest Seasoning Blend

Instructions

    1. In a large bowl, combine the bell peppers, red onion, tomatoes, corn, black beans, pinto beans, diced jalapeño, cilantro, and avocado.
    2. In a small bowl or jar, whisk together the AOOC Key Lime Balsamic, AOOC Cilantro & Onion Olive Oil, honey, garlic, and Southwest Seasoning Blend until emulsified.
