Ingredients
- 2 bell peppers, diced
- 1/2 red onion, diced
- 1 cup cherry tomatoes, quartered (or 1 can rotel tomatoes)
- 1 cup corn (fresh, canned, or thawed from frozen)
- 1 can black beans, drained and rinsed
- 1 can pinto beans, drained and rinsed
- 1 jalapeño, diced (seeds removed)
- 1/2 cup fresh cilantro, chopped
- 1 avocado, diced
Cilantro-Lime Vinaigrette:
- 2 tbsp AOOC Key Lime Balsamic

- 1 lime, juiced
