Olive Oil Cake

Olive Oil Cake

This moist and flavorful citrus olive oil cake is lightly sweetened and infused with bright citrus zest and balsamic notes. The addition of extra virgin olive oil gives it a tender crumb and a rich, smooth texture. Perfect for a simple yet elegant dessert or afternoon treat!

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 1 cup AOOC Extra Virgin Olive Oil (or try Blood Orange Olive Oil or Lemon Olive Oil)
  • 3 eggs
  • 1 cup yogurt
  • Zest of 1 clementine (or lemon)
  • 2 tablespoons AOOC Cara-Cara Orange & Vanilla Balsamic (or AOOC Sicilian Lemon Balsamic)

Topping:

  • 2 tablespoons AOOC Olive Oil (same as used in cake)
  • 3 tablespoons powdered sugar

Instructions

    1. Preheat the oven to 375°F.
    2. Line a 9-inch cake pan with parchment paper and set aside.
    3. In a large bowl, whisk together all the cake ingredients until well blended but slightly lumpy.
    4. Pour the batter into the prepared cake pan and place it on the middle rack of the oven.
    5. Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.
    6. Allow the cake to cool slightly until warm enough to handle.
    7. Use a toothpick to poke the top surface of the cake.
    8. Brush 2 tablespoons of olive oil over the surface, allowing the cake to absorb it.
