Ingredients

For the Steak

  • 1 skirt steak
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp AOOC Maple Balsamic
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp AOOC Butter Olive Oil
  • 1 onion, sliced (optional)

For the Garlic Aioli

  • ½ cup mayonnaise
  • 1 tbsp AOOC Garlic Olive Oil
  • 1 tsp AOOC Eureka Green Lemon Olive Oil
  • (or substitute 1 tsp fresh lemon juice)
  • Pinch of salt
  • Black pepper to taste

For Serving

  • Hoagie rolls, ciabatta rolls, or sub rolls

Optional toppings:

  • Provolone cheese

Instructions

    1. Place sliced onion in the bottom of the crockpot if using. Lay the skirt steak on top.
      Pour in the beef broth, Worcestershire sauce, and Maple Balsamic.
      Sprinkle with garlic powder, onion powder, salt, and pepper. Drizzle Butter Olive Oil over the top.
    2. Cook on LOW for 4–5 hours or HIGH for 2–3 hours. Because skirt steak is thin, it does not need to cook all day like a roast.
      Once tender, shred or slice the steak and allow it to sit in the cooking juices for about 10 minutes before serving.
    3. Make the Aioli
      In a small bowl, stir together mayonnaise, Garlic Olive Oil, Eureka Green Lemon Olive Oil (or lemon juice), salt, and pepper until smooth.
      Taste and adjust if needed.
    4. Assemble the Sandwiches
      Lightly toast the bread if desired.
