Ingredients

  • 1/3 cup AOOC Roasted Walnut Oil (or AOOC Butter Olive Oil)
  • 3/4 cup maple syrup
  • 2 large eggs
  • 1/2 cup milk
  • 3 large overripe bananas, lightly mashed (or 4 smaller bananas)
  • 1 1/2 cups all-purpose flour
  • 1/3 cup large flaked oats (plus extra for sprinkling on top)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (plus extra for sprinkling on top)

Instructions

    1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper cups.
